Hand selected from the left bank of the River Rhine

Dense white peach and apricot flavors anchored by a zesty backbone of acidity.

Spätlese translates to "late harvest" whereas trocken means "dry". This wine is paradoxical in that it’s the driest of all late-harvest wines.

Directions
  1. Slice red onion and salt generously, let stand 15 minutes until it begins to release its liquid. (This will remove some bitterness.) Rinse well.

  2. Place fish, garlic, onion, salt, pepper, chili, and lime juice in a shallow bowl, gently mix, and marinate in the refrigerator for at least 20 minutes before serving.

  3. Before serving, add cilantro, cucumber and tomato and a drizzle of olive oil. Gently mix. Taste for salt. If adding avocado, gently fold it in last, making sure to use one that is not too soft.

  4. Enjoy alone or with tostadas, tortilla chips, toasted corn tortillas or whatever your little corazon desires.

Ingredients
