Spätlese translates to "late harvest" whereas trocken means "dry". This wine is paradoxical in that it's the driest of all late-harvest wines.

  1. Slice red onion and salt generously, let stand 15 minutes until it begins to release its liquid. (This will remove some bitterness.) Rinse well.

  2. Place fish, garlic, onion, salt, pepper, chili, and lime juice in a shallow bowl, gently mix, and marinate in the refrigerator for at least 20 minutes before serving.

  3. Before serving, add cilantro, cucumber and tomato and a drizzle of olive oil. Gently mix. Taste for salt. If adding avocado, gently fold it in last, making sure to use one that is not too soft.

  4. Enjoy alone or with tostadas, tortilla chips, toasted corn tortillas or whatever your little corazon desires.

  • 1 pound fresh fish - sea bass, grouper, fresh shrimp, or hamachi - diced into ¾ inch cubes

  • 2-3 garlic cloves finely minced

  • 1- 1 ½ teaspoons kosher salt

  • ¼ teaspoon black pepper

  • ¼ cup fresh cilantro chopped

  • 1-2 fresh serrano or jalapeno chili peppers (seeded if you're looking for a milder dish) and finely chopped

  • ¾ cup fresh lime juice ( 4-6 limes) freshly squeezed

  • ½ red onion very thinly sliced, salted, and rinsed

  • 1 cup grape or cherry tomatoes, cut in half (optional)

  • 1 cup diced cucumber

  • 1 tablespoon olive oil ( optional)

  • 1 semi-firm avocado (optional but recommended)
