THE PERFECT RECIPE: homemade general tso’s sauce
To make a cornstarch slurry, mix equal parts cornstarch and water together to create a thin paste
Cook everything except the cornstarch and water over medium-high heat until reduced by half. Thicken with a spoonful of cornstarch slurry.
1/2 C xiaoxing wine
1/2 t ground garlic
1/2 C rice wine vinegar
1/2 t ground ginger
1/4 C hoisin
1/2 t Chili Crisp sauce (crushed chili in oil)
2 T sugar

A typical Santenay red wine is more deeply colored than the wines from further north, but still retains the dark cherry color so characteristic of red Burgundy. The aromas are of licorice, red berries and violets, and the most perfumed examples also show notes of rose petals. Quite the Belle of the Ball.
