Chablis is a quite powerful expression of Chardonnay, but not in the buttery, woodsy and almost sweet style that California has introduced us to. Think more green, like green hay, green apples, green guava and strangely enough, green rocks. Other flavors include candied lemons, yellow flowers, and a whisper of cinnamon and vanilla, but a faint whisper. Fat and round on the mouth to fill out those high-toned acid notes, 1er cru Chablis is quite the treat, and 2014 is a stellar vintage. Pro-Tip: Pairs well with all things turkey and potato!
