Castillo de Benizar Semi-Dulce

A fresh and fruity wine made from Airén. By halting fermentation of the wine earlier than normal, the winemaker was able to achieve a semi-sweet wine with good acidity, akin to the still moscato wines of Italy. Aromas of pear and banana greet you in the glass before a white-plum note and crisp Asian pear flavors round out the palate.

Clear yellow in the glass with first scents of pear, white peach and nectarine. The mouth changes as those ripe fruits are replaced by ripe citrus and crisp, fresh acidity. Enough texture to carry all of those flavors along with their aromatic density though the palate with whispers of spicy white pepper on the finish. Crisp, clean and mineral - Chablis!

Classic barrel aged Burgundy. Sugar torched pineapple and candied orange zest mingle with ripe yellow fruits and flowers amongst a background of brioche toast and lightly sweetened buttercream chiffon. A biting lemon acidity keeps everything fresh and tidy, and a finish of tart quince and white peach wraps up a beautiful classical white Burgundy.

This is a “blend” of what two polarizing styles of Chardonnay can be. Full of notes of bright spring flowers, honeysuckle, lime zest, and Meyer lemon on one hand, while still embracing the buttery richness and tropical fruit notes of candied pineapple and baked apple pie that Chardonnay can produce. With an average vine age of 45 years, this unoaked Chardonnay is still incredibly powerful in the glass.

A semillon and Sauvignon Blanc blend with scents of tropical fruit like lychee and honeysuckle on the nose. The Sauvignon blanc dominates the palate with tart, zesty lime and underripe kiwi, finishing with nice weight and texture.

Sainte Avoye Blanc Tradition

Our first wine aged sous-voile, or under the delicate flor veil of yeast like sherry or vermouth! This intentionally oxidized Chardonnay blend is polarizing to say the least, but any fans of Sherry will be doing backflips out of excitement. The nose is savory and sweet, like soy sauce coated cashews in a field of citrus flowers. The palate is a cacophony of flavors and experiences: spice, freshness, fatness, acidity, nuttiness, perfume and a hint of creaminess. Watch out, it’s addictive to sip on and fantastic with a plethora of foods - including almost impossible to pair culprits such as artichokes and asparagus.
