YOU SAMPLED a Bold red from

Ontinar Merlot

Brick red with tons of density and a big, creamed berry bouquet with peony and baby's breath scents mingling in there. Toasted coconut, a little leather grip and vanilla starts the long, intense finish of the wine. It's dry, but still so delightfully fruity and that toasted coconut notes follows through and adds complexity and nuance. Oh, and it's organic!

Port Salut grilled cheese, tomato soup, Cioppino

L’Échappée Bel Merlot

Stainless steel aged Merlot - the racier, leaner side of the grape. The nose explodes with ripe cherry and even-more-ripe raspberry notes that translate perfectly to the palate and bring with them a crisp acidity that lightens everything up, and a faint sweet-herb note to keep it interesting.

PERFECT WITH

Baked fish, Pot roast, Roast tomato crostini, Take-out roast duck

Coustarret Jurançon Moelleux

A sweet wine from South west France that’s got enough acidity and brightness to not be reserved for desserts only. Sébastian has the light touch necessary to show the delicacy and great charm of the Petit Manseng grape. His English isn’t too great, nor my French, but through the joy of wine drinking and gesticulation we were both able to agree that the fine balance between honey and apricot fruits was lovely amongst such poised acidity, and that the wine is light and fresh as well as ripe. As Sébastian did a finger kiss I thought was only reserved for Italian chefs tasting their latest masterpiece, he looked me in the eye and uttered a simple “viola!” Viola, indeed.

PERFECT WITH

Apple pie (homemade or McDonald’s,) salty cheese, blue cheese, a perfect aperitif

Giovanni Abrigo Barolo Ravera 2015

A warm year that produced an ephemeral nose of strawberry, cherry and sweet liquorice scents. In time, flavors of raspberry compote, clove, tobacco and notes of deeply scented flowers come through.

L’India Garnaxta Blanca

Greenish-yellow with golden highlights in the glass when the light catches it the right way. Sweet fennel and other herbs can be detected on first sniff with pear and tropical fruits eventually raising from the glass. Broad and unctuous with a light glycerin mouthfeel, marked acidity and white pear, white peach and warm grass flavors. Also, is that a touch of sweet hay or lanolin?

PERFECT WITH

Salmon nigiri, charred octopus, braised rabbit, spicy cuisines.
